- Warm a large skillet over medium heat until it feels hot but not smoking. Place a tortilla into the skillet and let it warm for about 20 seconds, watching as it softens and becomes pliable, then flip to warm the other side for another 20 seconds. This helps prevent tearing during rolling.
- While the tortilla warms, shred or slice your leftover turkey into bite-sized pieces. If it's cold, give it a quick microwave for about 10 seconds to make it easier to handle, then set aside.
- Remove the warm tortilla from the skillet and place it on a plate. Spread a tablespoon of spicy aioli or mayonnaise evenly over the surface, leaving about an inch around the edges. This layer adds flavor and helps hold everything together.
- Layer on a handful of shredded turkey across the center of the tortilla, then sprinkle with shredded cheddar cheese for melty goodness. Add a few slices of cucumber and some chopped crisp lettuce for fresh crunch.
- Carefully fold the sides of the tortilla inward, then roll tightly from one end to the other to form a compact wrap. Place the seam side down on a plate to keep it sealed. Repeat with remaining tortillas and fillings.
- Return the skillet to medium heat. Gently place each wrap seam-side down into the pan and cook for about 2 minutes until golden brown and crispy. Use a spatula to press down slightly, encouraging even browning and helping the cheese melt inside.
- Flip the wraps carefully and cook the other side for an additional 1–2 minutes, until the exterior is crispy and golden. You should hear a gentle crackle as the wraps toast, and the cheese inside should be melting.
- Remove the wraps from the skillet and let them rest on a plate for about a minute. This helps the fillings settle and prevents spillage when slicing.
- Slice each wrap diagonally with a sharp knife to reveal the layers of crispy exterior, melted cheese, and fresh fillings. Serve immediately with an extra squeeze of lemon juice for a bright, tangy finish.
Notes
For extra crunch, toast the wraps a little longer, but keep a close eye to prevent burning. Resting the wraps after frying ensures clean slices and prevents spilling. Customize fillings with your favorite veggies or spreads for variety.
