- Preheat your oven to 180°C (350°F) and lightly spray a muffin tin with oil or line with silicone liners.
- Pour the egg whites into a mixing bowl and add a pinch of salt and freshly ground black pepper.
- Whisk the egg whites vigorously until they become frothy and slightly bubbly, about 30 seconds. You’ll notice a silky, airy texture forming.
- Gently fold in the chopped chives, diced bell peppers, and shredded cheese if using, being careful not to deflate the whites.
- Pour the mixture evenly into each muffin cup, filling about three-quarters full to allow room for puffing.
- Bake in the preheated oven for 15-20 minutes, until the bites are puffed, slightly golden around the edges, and feel firm when gently pressed.
- Remove the muffin tin from the oven and let the bites rest for 5 minutes. This helps them set and makes removing easier.
- Gently loosen the edges of each bite with a small spatula and lift them out of the muffin tin.
